Chicken & Avocado Salad
- 4 chicken breasts, roasted and sliced
- 2 cups Crosse and Blackwell Tangy Mayonnaise
- 2 Tbsp. lemon juice
- 3 tsp. Colman’s Mustard
- 2 tsp. garlic, crushed
- 2 avocados, sliced
- 25g lettuce leaves
- 3 tomatoes sliced
- 22g rocket leaves
- Salt & pepper to taste
1. In a small bowl, mix together the Crosse and Blackwell Tangy Mayonnaise, lemon juice, Colman’s Mustard, crushed garlic, salt and pepper. Set aside.
2. Combine together the rest of the salad ingredients together in a bowl and toss them well.
3. Gentle drizzle the dressing over the salad and serve.
Toast some pieces of bread with olive oil, salt and pepper and throw in your salad for extra crunch.
